Leek

Often infested, between the layers of the leek, with thrips and other small insects (Illustration 289).
A.Cut off the green leaves from the tubular part and discard them (Illustrations 290/b, 291).
B.Cut off and discard about ½ cm (1/5 inch) at the bottom, near the root (Illustrations 290/a, 292).
C.Halve the tube down its entire length (Illustrations 290/c, 292). Separate into individual layers (Illustrations 290/d, 293).
D. Rinse each layer and each leaf under a strong stream of running water, while rubbing with your fingers.
Alternatively, you may soak the pieces in soapy water and then rinse each piece (without rubbing).
