Garnishing vegetables

Boston, green leaf, red leaf, lettuces, kale, herbs, etc.
Generally heavily infested (Illustration 267).
Prevent any contact between the garnish and the food placed upon it. This is accomplished by covering the bed of garnish with plastic wrap prior to placing the food onto the platter.
