Garlic

Green leaves – harbor insects. (See “Scallions”).
Cloves – Peel and rinse.

Peel and rinse well (Illustration 265). Any soft brown areas should be removed. If green leaves are sprouting from the clove, halve the clove, remove the sprout, and wash well (Illustration 266). [level h3=” Dehydrated garlic (such as garlic slices)” gen=”1″ gb=” us=” il=”]
Place in a strainer with large holes, shake, and check what falls through.
