Usually clean, but occasionally a worm may be found in the vegetable.
Check the outside of the eggplant for a hole. Cut off the stem and check
the cut surface for the beginning of a tunnel (Illustrations 226, 227).
While cutting the eggplant into pieces, check for a tunnel with dark
deposits inside. (Small dark dots scattered throughout the flesh of the
eggplant are seeds).
For roasting an eggplant whole, use only high-quality eggplants and
check them externally as explained above.
In certain countries, such as Brazil, the level of infestation in eggplants
is high.
