Chinese cabbage Napa

A.Separate the leaves and remove the curly edges.
B.Soak in soapy water for about three minutes.
C.Rinse well.
D.Check each leaf, on both sides, with through-lighting (Illustration 204).
Note: If you use only the smooth spine of the leaf, it is enough to rub it with a wet sponge and rinse well.
