Celery

Stalks

Separate the stalks from one another and remove the thin branches that have the leaves growing out of them (Illustration 192).
Cleaning the stalks: Rub on both sides with a vegetable brush or scrubbie and rinse (Illustration 193).In countries (such as the United States) where there are leaf miners inside the stalks, examine them carefully for tunnels (Illustration 194). Remove the affected areas. In these places, it is preferable to use specially grown celery or to cook the stalks separately, strain the stock through a cloth, and use only the strained stock (Illustration 195).

Leaves

To use the leaves of celery that grew in open fields, wash them well, cook them by themselves, strain the stock through a cloth, and use only the strained stock.

Specially grown bug-free celery

Separate the stalks from one another. Soak stalks and leaves in soapy water for about three minutes and rinse well. It’s best to rub the stalks while rinsing.
