Peel, rinse, and check for holes. If found, remove the affected area.

Stalks: The stalks are hollow. Cut them down their length, place in a bowl of soapy water for three minutes, and rub them under running water, both outside and inside.
Leaves: The leaves should be washed, cooked separately, and then the stock may be strained through a cloth and used. The leaves themselves should not be used.
