Categories of Food

1. Presumed clean

Definition:
Rarely harbors insects, unless stored for prolonged periods or under poor conditions, or grown under poor conditions.
Disposition:
Does not require checking, but it is advisable to look over the general state of the product or check a sample. If signs of infestation are found, it should be checked.
Examples:
chocolate, pasta, matzo.

3. Sometimes infested – Mi’ut hamotzui

Definition:
Sometimes harbors infestation, and the presence of insects is not considered surprising or unusual.
Disposition:
Must be checked. After the fact (bedi’eved), if the food was already cooked without being checked and it’s impossible to check it now that it was cooked, it may be eaten.
Examples:
This category includes most foods. For example: Fruit – most fruits, such as plums, peaches, apricots, dates, walnuts. Vegetables – firm vegetables, such as beets, radishes, peppers. Dry foods – such as flour, barley, chickpeas, dry beans, sesame.

4. Usually infested – Muchzak betola’im

Definition:
Foods that, in the majority of cases, have insects in them.
Disposition:
Must be checked. Even bedi’eved, if the food was already cooked, it may not be eaten (unless it can be checked after cooking).
Examples:
Vegetables – asparagus, artichoke, scallions, broccoli, lettuce, cilantro, cabbage, cauliflower, peppermint, mangold, parsley, dill, spinach. Fruit – guava, carob, raspberries, dried figs, strawberries, mulberries. Legumes – broad beans, black-eyed peas.

5. Externally infested

Definition:
The infestation is only on the outside of the fruit, e.g. scale insects on the peel of fruit.
Disposition:
The peel must be checked, cleaned or removed.
Examples:
citrus fruit, sometimes sugar apple, persimmon, peaches, apples, plums, olives.
