Artichoke

Extremely infested. There may sometimes be dozens of insects between the leaves (Illustrations 141-145).

Artichoke bottoms

Remove all the leaves. Use only the firm artichoke bottom. Remove all protrusions and leaf ends from it and wash it (Illustration 146).

Artichoke leaves

If one wants to use the leaves, they must be separated from the artichoke bottom before cooking, soaked in soapy water, and rinsed thoroughly under a strong stream of running water, while rubbing each leaf with your fingers on both sides.

Canned, frozen

Artichoke bottoms. Remove any leaves that are protruding from them. Rinse before using (Illustration 147).
Artichoke hearts. Not recommended.
